Lacanche induction range cookers combine the brand's Classic French styling with an induction hob. They suit cooks who want a traditional range but have no gas supply. Widths run from the compact 70 cm Cormatin and the 90 cm Beaune and Bussy, through 140.5 cm and 180.5 cm models, up to the 220.5 cm Vezelay. Most come in 30 colours, from Anthracite and English Cream to Delft Blue and Terracotta. Many also offer a choice of trim in chrome, nickel, brushed stainless steel, brass or matt chrome.
Induction heats the pan directly. It reacts quickly when you change the setting, and the surface around the pan stays cooler and is easier to wipe clean. Hob layouts vary. Many models have three zones with boost, including a large 270 mm ring for stockpots and big pans. Others have five zones, and the Chemin and Chaussin include an oval zone that suits long pans and fish kettles. The 90 cm Beaune and Bussy have six zones. The wider ranges leave space to add one or more optional hob elements.
The ovens are where these ranges differ most. Static ovens heat from the top and bottom in the traditional way, for baking and slow roasting. Convection (fan) ovens spread heat evenly when you cook on several shelves at once, and dual function ovens switch between the two. Most wider models include a 79 litre simmer oven, or a neutral cupboard in its place. A simmer oven is useful for warming plates, keeping food hot and slow cooking. Some also add a 20 litre static oven with grill for grilling or smaller dishes. The ovens are rated A for energy efficiency, with static ovens and grills rated B.
To narrow the choice, start with the width your kitchen can take. Next, decide how many hob zones you need. Then pick the ovens that suit how you cook: fan for batch baking, static for traditional bakes, and a simmer oven if you often slow cook or entertain.
